when the game is in play, right click on the BG you will see a mode drop down… first time you do this it will look blank…
then you click on the dropdown you will see the modes…. after you choose a mode, at the bottom click on save, then you will need to hit F3 or restart the table

Right click on backglass and settings menu should pop up with options to choose which version. Click the side arrow as seen in pic. Then choose Authentic or Fantasy.

DMD, for that i prefer real Colors, but the Blue are fine too.
