For me it seems like ICP’s Dracula is pretty challenging. I never seem to be able to keep a game going for very long.

Rarely do I get high score on anything :( but when I do I’m playing older em.

Personally I really like it when a table is difficult (I’m looking at you, VPX Bride of Pinbot). I’m not the hottest at real pinball either so I look for VP tables where I can get approx. the same scores in real pinball. I tend to play the real easy VPs a lot less.
